You shouldn’t need file sharing running to use Plex (or Plexamp). Make sure you have a recent version of Plex server running on the mini.
Remember also that home sharing still works in older versions of iTunes, so if you have it set to open iTunes on your file server, you should be able to connect from Apple Music on your M1 without using file sharing. Double-click this file to mount the server and test. Highlight the text and drag it to the desktop to create a url file. You can force one or the other by creating a url like afp://10.0.1.10 or SMB://10.0.1.10 in TextEdit. Then make sure you are consistently mounting it the same way between reboots.
